This quiche is easy to prepare and only takes an hour to cook, its tastes delicious, it's a good way to eat lots of veggies.

Ingredients

  • ¼ cup cream
  • 8-10 eggs
  • 2 tbsp milk
  • 1 tbsp oregano
  • 6 rashes bacon omit for vegetarian
  • 1 tomato
  • 1 cucumber
  • 1 zucchini
  • 3 garlic cloves
  • 1 onion
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tbsp mixed herbs
  • 1 handful spinach
  • ¼ cup Cheddar Cheese optional

Instructions

  • Dice the bacon and fry in a frying pan.
  • Start chopping the onion and garlic while the bacon is cooking, once chopped put in with the bacon
  • Cook for 5 minutes then add diced tomato, diced cucumber and diced zucchini
  • Roughly chop the spinach and add to the pan
  • Cook until most of the liquid evaporates
  • Add the eggs into a large stainless steel bowl and beat the eggs, then add the cream, milk and herbs
  • Mix until combined then add the cooked veggies and bacon mixture
  • Put into a casserole dish and bake at 160°C/320°F for 1 hour
