- ¼ cup cream
- 8-10 eggs
- 2 tbsp milk
- 1 tbsp oregano
- 6 rashes bacon omit for vegetarian
- 1 tomato
- 1 cucumber
- 1 zucchini
- 3 garlic cloves
- 1 onion
- ½ tsp salt
- ¼ tsp pepper
- 1 tbsp mixed herbs
- 1 handful spinach
- ¼ cup Cheddar Cheese optional
Dice the bacon and fry in a frying pan.
Start chopping the onion and garlic while the bacon is cooking, once chopped put in with the bacon
Cook for 5 minutes then add diced tomato, diced cucumber and diced zucchini
Roughly chop the spinach and add to the pan
Cook until most of the liquid evaporates
Add the eggs into a large stainless steel bowl and beat the eggs, then add the cream, milk and herbs
Mix until combined then add the cooked veggies and bacon mixture
Put into a casserole dish and bake at 160°C/320°F for 1 hour
