AIP, Vegan, Gluten Free, Dairy Free, No Egg, No Nuts, No Processed Sugar
Are you buying those wraps from the supermarket that seem to last for years and taste like cardboard? That’s because they are full of chemicals and preservatives and are not healthy at all for you or your kids. The cassava wrap is easy to make in 10 minutes and can be eaten by anyone with allergies or on AIP like me.
This recipe is for anyone that want’s to cook a healthier flat bread and use flours that are more nutritious than standard bleached plain flour. You don’t have to use Cassava flour it can be substituted for a number of different flours like Rice flour, Tapioca flour, Coconut flour, Buckwheat flour, Millet flour, Arrowroot flour, or even a gluten free plain flour. You will have to combine some of the flours to get the same result, always use Tapioca or Arrowroot flour combined with the others.
This is a quick and easy wrap to make and can be used for dips like my Hummus Recipe, cut it into biscuits, as bread, as a pizza base, flat bread with peanut butter or my Healthy AIP Nutella on it.
If you are AIP or Paleo this works great with smashed avocado on the wrap instead of mayonnaise with a simple salad and Tapioca Cheese.
Let’s get started on our Cassava Wrap….
In a stainless steel mixing bowl put the cassava flour, olive oil, salt and warm water, mix it all together to form a dough ball. I usually use boiling water so it’s easier to use a spoon to combine, just press the spoon into the flour and water until combined. Sometimes it takes a little time to get the oil and flour to combine properly so give it a minute or so for the dough to form.
If the mixture is too wet and is not making a ball then just add a teaspoon of cassava flour until it comes together.
If the mixture is too dry and won’t make a ball, you will need to add a little bit more water a teasponn at a time. It’s best to use warm to boiling water at the start but after that you can use room temperature water. It should look like below before it turns into a dough ball.
Now it should come together into a dough ball like the picture below.
There are a couple of ways to get the wrap flat, you can use two sheets of baking/parchment paper and roll it out with a rolling pin or use a tortilla press from Amazon.
I find it easier to use a carbon steel frying pan and press the dough flat directly using my hand. These frying pans are awesome as they are naturally non-stick and have no chemicals, you can use steel utensils and are easy to keep clean.
It only needs about 1-2 minutes to cook without oil before flipping it over to cook the other side.
Place the cooked wrap on a plate and put a tea towel over the top, so it doesn’t dry out and stays soft. It’s best to use after it’s made as they don’t keep well overnight.
I used my Healthy AIP Nutella on the picture above, but you can use any topping like peanut butter or avocado smash. You can also change the recipe and make a herb bread by adding things like rosemary or parsley, or garlic and basil. The sesame seeds are optional and may not go with every flavour, I like to add them as they are super healthy.

- ¾ cup Cassava flour
- ¼ tsp Salt
- 1 tbsp Sesame seeds optional, omit for AIP
- 2 tbsp Olive oil
- ⅓ cup Warm water
Instructions
- Place all ingredients in a stainless steel bowl and combine into a dough ball
- Cook in a frying pan without oil for a couple of minutes then flip and cook the other side.
- Place on a plate and cover with a tea towel for a few minutes to keep the wrap soft.
