AIP, Vegan, Vegetarian, Paleo, Gluten Free, Dairy Free, No Eggs, No Nuts and No Processed Sugar
A Banana Stick is a super easy snack that is healthy because you just slice the banana vertically into long sticks and cook them in the oven for an hour. They are they perfect snack for kids and people who have allergies. I eat the banana sticks by themselves but you can add cinnamon and coconut syrup to add flavour.
Any banana, such as a Lady Finger or regular banana, will work, but I’ve found that the lady finger works best because it’s less squishy, remains together, and bakes more evenly. This recipe is suitable for people with allergies because it is gluten free, dairy free, egg free, sugar free and vegan.
Lady Finger bananas are diploid cultivars of the Musa acuminata plant, popularly known as sugar, fig, or date bananas. They have tiny, delicate skin and are sweet.
Substitution:
You can use normal banana’s but the last part of cooking where you turn up the temperature you must cook for less, so instead of doing 10 minutes at 180℃/356℉ reduce the time to 5 minutes because it gets burned at 10 minutes on each side. Normal banana’s caramelise after the hour of cooking in the oven and have a sweet flavour and soft texture. The difference between a lady finger and a normal banana is the lady finger is more like a biscuit and they keep their shape and are harder in texture compared to the normal banana.
Storage:
They last 3-4 days in an airtight container out of the fridge when cooked.
Instructions:
Turn the oven on to 140℃/284℉ to heat up.
Peel the banana’s and then cut them length ways. Now put them on baking paper and then on a baking tray and cook for 20 minutes.

Now flip the banana pieces over and cook for another 20 minutes. The photo below is a close up of the Lady Finger banana.
Now turn the oven up to 180℃/356℉ and cook for 10 minutes unless you are using normal bananas then only cook them for 5 minutes. The below photo is of the Lady Finger banana after cooking it at low temperature.
Now flip then over and cook for another 10 minutes at 180℃/356℉ or 5 minutes for normal banana. The photo below is of normal banana after cooking it the low temperature.

- They are now ready to eat.
