AIP, Paleo, Gluten Free, Dairy Free, No Eggs, No Nuts and No Processed Sugar
This is a delicious and simple recipe to make when you are stuck for something to make for lunch or even dinner and can be made in less than 30 minutes. Some would call it a Grilled Cheese and others around the world call it a Toastie, but basically it’s just two bits of bread with a filling and toasted either in a frying pan or a sandwich press.
The most important part is to source high quality bacon and chicken from a butcher you trust that sells meat without chemicals or hormones. You can also use any type of bread you like but for people with allergies and especially people following the AIP diet then stick with the cassava wrap.
This is healthier than any other toasted sandwich recipe as it doesn’t include butter or mayonnaise but still tastes amazing thanks to the avocado, and it’s has no cheese thus calling it a grilled cheese makes no sense.
Instructions:
First cut up the bacon into small squares and fry in a carbon steel frying pan with a tablespoon of olive oil.
Let the bacon cook on a medium to high heat and keep stirring so that it doesn’t burn.
While the bacon is cooking cut up the chicken into small pieces. Start adding the chicken once the bacon has started to brown and some of the fat has disappeared.
Keep stirring the bacon and chicken.
The chicken will turn white as it is cooking and the bacon will start to turn brown.
Wait until the fat gets cooked out of the bacon pieces.
This is what the mixture looks when cooked.
Making the Bread
You can use any bread you like for this recipe but I would recommend making your own and using my cassava-wrap recipe which is Gluten-Free, Diary-Free and much healthier than normal bread.
The two balls in the bowl from the picture below are the wrappers for the toastie, just squash them into a carbon steel frying pan until they are circular and thin, then cook the wrap with no oil for about 1 minute, then flip onto the other side to cook for 1 minute. Put the wrap on a plate and cover with a tea towel so it doesn’t dry out.
Run cold water over the frying pan and then dry with a tea towel so you can flatten the other ball without burning yourself. Now repeat the cooking process for the second wrap. I use carbon steel frying pans because they don’t leach chemicals into your food like non stick frying pans.
The best part of this recipe is the avocado which provides a creamy and delicious taste like mayonnaise but more natural. You can just squash the avocado and use it without adding extra spices but I recommend using my avocado dip for a better flavour and the added nutrients from the spices and sauerkraut.
Put all ingredients in a bowl and mash together to combine.
Put one of the wrappers onto the sandwich press then spread some of the avocado dip on as the first layer, then for the second layer add the bacon and chicken mixture. This is how much bacon/chicken mixture I put on my toastie.
Now put the other wrapper on top in the sandwich press.
Now close the lid on the sandwhich press and cook for 5 minutes. Make sure to check it so it doesn’t burn.
This is the toastie cooked and ready to eat.
Tip: If you don’t have a sandwich press you can always just use a frying pan and flip half way through the cooking process, just be careful as some of the ingredients might not stay in the middle.
Substitutions
You can substitute bacon for ham or just leave the bacon out and add more olive oil to cook the chicken. You could also leave the chicken out and just use bacon but I would recommend to always use the avocado as it’s what creates the delicious taste.

Instructions

- Cut up the chicken into small pieces and add to the bacon to cook on a high heat it will take about 10 minutes until they start to crisp up.
- Now make the avocado dip from my website. It only takes 10 minutes to make.
- Now make the cassava wrap from my website. It only takes 10 minutes to make.
- Put one wrapper on the sandwhich press, then spread some avocado dip on the wrapper, then add the bacon and chicken mixture on top of the avocado.
- Now put the second wrapper on top and close the lid and toast.Toast for 5 minutes
